Simple & Tasty Wele Stew Recipe

Wele stew is one of the best comfort dishes in Ghana. The wele is cleaned, boiled until it is soft, and then stewed with tomatoes, onions, and a lot of spices. While some regions add their variations, others stick to a basic combination of pepper and onions. It is a street food, home food, and the kind of meal that tastes even better the next day.
Lets learn how to make it.

INGREDIENTS
Wele
Tomatoes
Tomato paste
Onion
Pepper (kpakposhitor)
Ginger
Garlic
Oil
Green bell pepper
Chili pepper flakes
Bouillon cube
Salt to taste
DIRECTIONS
Start by cutting your wele into sizable chops and blending your pepper, ginger, and garlic into a paste.
Add your wele into a pot on fire along with some chopped onions and the spice paste.
The water added should just be enough to boil the wele till it turns soft.
Put another saucepan on fire on medium to high heat and pour in some vegetable oil.
Put some chopped onions in and stir for 1-2 minutes, and add your tomato paste and blended tomatoes.
Stir fry until it cooks properly and pour in your marinade (pepper + ginger + garlic) and continue to fry for an additional 3 minutes.
Add chili pepper flakes and stir for another 1 minute.
Cover and allow to simmer for 10 minutes and add your stock.
Add a bouillon cube and salt to taste.
When the wele stew base looks and tastes good, pour in your steamed wele and chopped bell peppers and stir.
Stir for 2-3 minutes and its done.
