TUBAANI- A DELIGHT FROM NORTHERN GHANA

Tubaani, which is basically steamed bean pudding, is a savoury delight originating
from the Northern part of Ghana, traditionally served with unique spicy oil and onions
as toppings. Tubaani is rich in protein, folate (vitamin B9), fibre and has a low
glycemic index, making it a good food choice. Also, it is 100% vegan and gluten-free
which makes it accessible for those with dietary restrictions.

Let's get into how this delicacy is prepared.
Ingredients
Black eyed beans flour ( 2 cups)
Salt petre/baking powder (1 tablespoon)
Water (warm)
Wrapping (dried corn husk/fresh green leaves)
For Garnish
Vegetable oil
Onion
Powdered chilli pepper/ suya pepper
Salt to taste

Direction
1. In a bowl, slowly add warm water to your bean flour while stirring until a
pudding consistency is attained.
2. Dissolve 1 teaspoon of saltpetre or baking powder in water, add to your batter and
whisk for about 5-10 minutes to make the batter fluffy and light.
3. Scoop batter into your cleaned wrap, fold appropriately to prevent any leakage.
4. Steam over medium-high heat for 30-45 minutes. Your Tubaani is ready when it
becomes firm to the touch through the wrap.
For Garnish
1. Fry sliced onions until soft and caramelised.
2. Prepare a mixture of chilli pepper powder and salt to your taste.
How to serve
1. Unwrap your fully cooked Tubaani, then cut into slices.
2. Add drizzles of your onion-infused oil on Tubaani slices.
3. Sprinkle pepper-salt mixture on your Tubaani, then add your fried onions
4. There you have it, your Tubaani is ready to be enjoyed while still hot.
